Time for another comfort food classic in this household; roast chicken, crispy potatoes, and whatever vegetable we have in the fridge. In this case, I think buttered courgette. No need for a recipe, just a salted chicken roasted on a bed of onions and garlic, a good long cook for the potatoes in a ton of oil for a proper crisp, and a solid gravy afterwards made in the dish we did the chicken in. An instant throwback to winter Sunday evenings growing up; condensation misting the insides of the windows with the cold dark outside.
